As Hong Kong's population ages, a silent challenge grows. Sadly, the simple joy of eating often becomes a struggle for seniors who, like many, face swallowing difficulties. So, to give seniors an opportunity to enjoy high-quality meals, Chinachem Group (CCG), in partnership with the Golden Age Foundation, responded in 2023 with the Golden Gourmet initiative – a programme delivering dignified, delicious dining for the elderly.
At the heart of this culinary innovation is Chef Andy Lam, Sous Chef at I-O-N, Nina Hotel Island South. Chef Andy helped design special menus which go far beyond typical ‘soft meals.’
"What surprised me most was the technical challenge," he shared. "It was necessary to adjust the texture and mouthfeel... using innovative cooking methods like low-temperature cooking and refined cutting techniques to ensure dishes were delicious but also easy to chew and digest." And the result? Nutrient-rich, visually appealing meals, free from artificial stabilisers.
For Chef Andy, Golden Gourmet reshaped his understanding of the role food can play.
"This experience completely changed my perspective," he explained. "The combination of gourmet dining and therapeutic nutrition not only enhanced the dining experience but also supported mental well-being. Food is so much more than simply filling the stomach; it’s a powerful tool to improve quality of life." And Andy’s philosophy shines brightly in dishes like the refreshing Watermelon and Feta Cheese Salad with Watermelon Gel, and the delicate Sole Fish with Egg White and Spinach Sauce.
The impact is deeply personal. Chef Andy recalled a powerful moment: "An elderly lady tried our food, her eyes lit up instantly, followed by a warm, satisfied smile. She told us it reminded her of flavours from her youth. In that moment, I truly understood the real meaning of my work... a love for life."
Golden Gourmet’s reach extends beyond hotel dining rooms. CCG chefs trained volunteers, equipping them with skills to prepare these special meals. These volunteers then brought "delicious, heartwarming meals directly to elderly homes" in communities like Tsuen Wan. "It really warms my heart to see these recipes helping volunteers," commented Andy. "Every meal is a little gesture of respect and kindness... it's about showing care and building community."
Awareness of the Golden Gourmet menu available at Nina Hospitality restaurants (Café Circles, I-O-N Wong Chuk Hang, I-O-N Kwun Tong) is growing. It represents more than a meal; it’s an invitation to experience dining that prioritizes both taste and essential wellbeing, proving that culinary artistry can be a meaningful act of care for our silver generation.
